Cooking over an open fire is woven into Roma culinary tradition — practical for a historically mobile life, and social by nature. The fire is a gathering point as much as a cooking method, drawing family and guests together.

Slow-cooked stews, grilled meats and breads baked in the embers carry a flavour and a conviviality that define many Roma meals.
